Tried it (and LOVE it): Hum Nutrition Vitamins

My first product review! Disclaimer: I was not reimbursed, paid, or otherwise compensated for this – I chose to talk about Hum Nutrition since I’ve been taking their products for almost a year now with really great results. If you’re not yet familiar with Hum, they’re a supplement company out of California that’s producing affordable, yet high-quality health supplements.

Rewind quick to 2018: I turned 45 years old, no health problems, but I was being a bit complainy about typical female mood stuff (apparently very common for women my age), and my doctor suggested I try a regular multivitamin to keep my vitamin D, B vitamins and iron up. I found myself endlessly Googling phrases like “best women’s vitamin”, “best natural vitamin”, and “best supplements for women”, which brought me to Hum. I researched. I watched You Tube reviews. I even Googled individual ingredients of some of the supplements – I mean, what IS fo-ti and PABA anyway? Was it safe? Was it going to make me feel ‘weird’?* I just wanted something that would tone down the old-lady mood stuff, and just basically keep me healthy and feeling good.

*Related note: I’m super particular about what I put in my body and hate feeling ‘altered’. Medications like simple antibiotics – even over the counter stuff – bothers me. I also tend to experience side effects very easily, so when I want or need to take something, I thoroughly investigate and start off slow to be sure I’m good.

Here’s the lineup of what I’m currently using and enjoying:

It’s like a sweet treat after dinner. I was taking Nature Made’s Hair Skin and Nails formula in the past, which contains 2500 mcg of biotin. This one contains 5,000 mcg so I’ve started slow and aim to save money by taking one gummy per day for a while to see if I see a difference in my hair. This bottle should last me two months, so I’ll report back with results!

The Takeaway:

Hum Nutrition is GREAT. Air Fryer Potato Skins

Who doesn’t love a good potato skin? With holiday parties come and gone, it’s time to think about football entertaining!

These are great for a crowd and can be customized with pretty much any topping you can imagine.

In my Googling for an easy Potato Skins recipe, I was discouraged by the amount of time “regular” potato skins took! An hour in the oven, plus more once baked, split and topped? I don’t know about you, but I don’t have that much free time, and I hate having my oven that long! So I came up with a cheat to make things go a bit quicker…the microwave/air fryer combo!

Crispy Air Fryer Potato Skins

You’ll need:

  • 3-5 russet potatoes
  • Cooking spray (I use Olive Oil Pam)
  • Toppings: shredded cheddar, bacon bits, sour cream, chives, etc.

How to:

  1. Prep potatoes by scrubbing clean and drying. Pole holes in potatoes with a fork and lay on a paper towel in the microwave.
  2. Microwave for 8-10 mins, or hit the “potato” setting if yours has one. Remove potatoes and check for doneness.
  3. Preheat air fryer to 390°F for 5 mins
  4. Once cool enough to handle, cut each potato in half and scoop out the middles, leaving about 1/8″ of potato all around. Cut each skin in half for more servings.
  5. Spray fryer basket with cooking spray and place potatoes into basket, as many that will fit. Top with cheese and bacon bits
  6. Air fry for 3-5 minutes and serve!
  7. Top with sour cream and chives

Air Fried BACON!

Yep, you read that right. And lucky for you, I experimented and got the timing just right!

I used one pound of bacon and my Cosori 5.8qt Air Fryer.

Lay bacon in the fryer basket, overlapping slightly and add a teaspoon of water into the pan (I read that this helps reduce the smoke when cooking). It took two batches to cook one pound of bacon. TIP: be sure to empty grease drippings after first batch.

This was my first attempt – 400° (no preheating), cooked for 12 minutes. Came out a bit tooooo crispy.

I emptied out the grease after the first batch and filled up my basket again. This time, 400° for 10 minutes. PERFECTION! Remove from basket and drain on paper towels.

Simple Whole Chicken in the Instant Pot

I make a really good chicken soup. Some even say it has healing powers! Today, my husband is under the weather, so I decided to make a batch.

Normally, I’d roast the chicken in the oven, then cut the meat into bite size pieces and add it to my soup at the last minute. This time, I thought, why not make it in the Instant Pot? It’ll keep my oven free (so I could make some brownies!) and it’ll get the soup going faster.

Here’s how I did it:

Tools: 8qt Instant Pot with rack

Basic Instant Pot Roaster Chicken

You’ll need:

  • 5-6lb roaster chicken
  • Seasonings of choice
  • 1-1/2 Cups water

How to:

  1. Place rack into Instant Pot, add water.
  2. Clean chicken and place on top of rack, season as desired. I used Trader Joe’s Everyday Seasoning and a little thyme.
  3. Secure lid on Instant Pot, set for 36 minutes at high pressure and walk away.
  4. Once finished cooking, let it naturally release for 20 minutes, then release the remaining pressure.
  5. Open lid and double check chicken temperature. Internal temp must be 165°F or above to be safe. Mine was actually reading at 180-190, but it was totally fine – moist and shredded easily!
  6. I shredded half of the chicken (and used some of the liquid in the pot) for my soup, and the other half to add to salads and things for the week. Enjoy!

Air Fried Oreos

Yes, you read that right!

I will in no way try and tell you that these are an exact copycat of the deep-fried, greasy carnival version, but these definitely satisfy a craving without as much guilt!

The biggest advice I have on this one is to make sure you preheat your air fryer WITHOUT the parchment paper in it. I learned this the hard way, after smelling a burning smell during the preheat. I opened my fryer to find the parchment sucked up into the heating element and burning! 🔥

Follow my how-to below for this fun treat:

Air Fried Oreo Cookies

  • Complete Pancake Mix
  • Water
  • Cookies of choice
  • Parchment Paper, cut to fit flat inside your fryer
  • Cooking spray (I use Pam Coconut Oil Spray for my sweets)
  • Confectioner’s sugar

    1. Preheat air fryer to 400°F for 5 mins.
    2. Remove basket and place a sheet of parchment paper into bottom, spray with cooking spray.
    3. Mix desires amount of pancake mix with water, adding slowly to keep mixture thick but not lumpy.
    4. Dip each cookie into batter and lay on top of parchment paper.
    5. Cook at 400°F for 6 mins (based on 6 cookies), then flip and cook a minute or two more until golden brown.
    6. Remove from basket and top with powdered sugar.

    Burrito Casserole

    If you’re tired of taco Tuesdays and want to mix it up a bit, this Burrito Casserole gives you the same flavor – and it’s great for feeding a crowd (think that big Football Party…). What I love most is that you can sneak lots of veggies in for some extra nutrition and they’re disguised by that great taco flavor (the kids won’t suspect a thing!).

    Basically this recipe contains all the same elements of a burrito, without the mess of wrapping and rolling. I served mine with tortilla chips, sour cream and avocado and everyone loved it!

    Burrito Casserole
    Serves 4-6
    Start to finish: about 30 mins

    What you’ll need:

    • 1lb ground turkey (or beef, or chicken)
    • 1 small onion, chopped
    • 1 packet taco seasoning
    • 3/4 Cup water
    • 1 Can Rotel (8oz, or 1 Cup of your favorite pre-made salsa)
    • 1 Cup frozen corn
    • 1 Can (8oz) Black Beans
    • 4 Cups of cooked white or brown rice
    • Shredded Cheese
    • Sour Cream, Avocado, and Tortilla Chips for serving (optional, but YUMMY!)

    How To:

    1. Preheat oven to 350 degrees F. Spray a 9″ x 13″ baking dish with nonstick spray.
    2. Prepare rice as directed on package. While rice is cooking, brown your ground meat with the chopped onion.
    3. Once meat is browned, add in: taco seasoning, water, Rotel, black beans, and corn.
    4. Stir all together until combined.
    5. Layer in baking dish: rice, then meat mixture, top with shredded cheese.
    6. Bake in oven for about 15 mins or until cheese is melted.
    7. Serve with sour cream, avocado, chips, etc.


    Crispy Air Fried Chicken Drumsticks

    Getting right to the recipe with this one because you need to add these drumsticks to your meal rotation stat! Super easy, and all done in about 30 mins. Crispy on the outside and juicy on the inside!

    Crispy Air Fried Chicken Drumsticks

    Serves: 3-4

    Start to finish: 35 mins

    What you’ll need:

    • 6 chicken drumsticks
    • Seasoning of choice (I use Trader Joe’s Everyday Seasoning on everything)
    • Nonstick spray

    How to:

    1. Spray fryer basket with nonstick spray.
    2. Place chicken in basket, season, and cook at 400°F for 15 minutes (I also hit the chicken button on my Cosori air fryer).
    3. Flip and cook another 15 minutes or until crispy and internal temp reaches 165°F.
    4. Remove at coat with with your favorite sauce – we did buffalo and bbq!

    Instant Pot Meatloaf AND Mashed Potatoes – cooked together!

    This is the very first recipe I ever made when I first got my Instant Pot, and it’s been a family favorite ever since!

    What I love about it: it’s an entire meal made in one pot! It’s also really nice when you have a comfort food craving and don’t want to heat up the oven (or wait for a pot of water to boil for the potatoes). I’ve narrowed it down to 3 easy steps, and included the full details below.

    Step 1: Cup potatoes and place in bottom of your Instant Pot. Add 1 cup of water and place rack on top of potatoes. Place a large piece of aluminum foil on top of rack to hold the meatloaf.

    Step 2: make meatloaf and form into a shape that will fit inside your Instant Pot (into the foil). Mix up topping and brush on top of meat.

    Step 3: once done cooking (20mins high pressure with a quick release), remove meatloaf on the foil and stick under your broiler if you prefer a crispy top. While the meat is broiling, mix up your mashed potatoes right in the Instant Pot!


    My meatloaf mix: Serves 4 with leftovers

    • 2 to 2-1/2 lbs 85% lean ground beef
    • 2 eggs
    • 1-1/2 cups seasoned breadcrumbs
    • 1/2 onion, finely chopped
    • 1 carrot grated (trust me, it’s good!)
    • 1/4 cup milk
    • 2 Tablespoons parsley
    • Salt and pepper to taste

    Mix all ingredients with hands (the best way!) in a large bowl until combined.

    Meatloaf Topping:

    • 1/3 cup ketchup
    • 1/4 cup yellow mustard
    • 2 Tablespoons dark brown sugar

    Mix all ingredients in a bowl until combined. Brush on meatloaf before cooking.

    Instant Pot Mashed Potatoes (for 4 servings):

    • 4 russet/baking potatoes, peeled and washed, cut into even sized chunks
    • 1 cup milk
    • 4 Tablespoons unsalted butter
    • Salt and pepper to taste

    You can cook these in your instant pot with or without the meatloaf! Place potatoes into pot with 1 cup water. Cook on high pressure for 20 mins with a quick release. Drain water and add milk and butter to the pot. Mash by hand or use electric mixer to whip. Add salt and pepper to taste.

    Instant Pot Meatloaf and Mashed Potatoes How To:

    1. Prep potatoes: peel, wash and chop up into equal size chunks. Place into bottom of Instant Pot with 1 cup of water.
    2. Place metal rack that came with your Instant Pot over the potatoes. Place a large piece of aluminum foil on the rack, making a well for the meatloaf to sit.
    3. Place meatloaf into the Instant Pot and pull up edges around meat to keep it separated from potatoes (this also prevents meat juices from dripping into the potatoes).
    4. Brush meatloaf topping on top of meat and close lid.
    5. Cook on high pressure for 20 minutes (my pot is an 8qt and this timing has been perfect).
    6. When finished, quick release and carefully remove meat with the foil. If you like the top to be crispier, place meatloaf under the broiler for 3-4 minutes.
    7. Drain potatoes and add milk and butter. Whisk or mash by hand (or with electric mixer) until you get the consistency you like! Serve with sliced meatloaf and enjoy!

    Air Fried (Fresh) Chicken Breast Strips

    While I do love the occasional air fried batch of processed/frozen, super-breaded chicken strips and nuggets, the whole purpose of this air fryer craze is to try and cook at least a little bit healthier, right?

    I made some chicken strips for dinner last night that turned out really good! Super simple – just 3 ingredients – a quick prep, and they came out fully cooked and moist inside and really crispy outside. My breadcrumb of choice is always Panko (here’s a great article about what Panko is from Chowhound) when I want my coating to be crunchy. The little flakes crisp up so much more nicely than standard breadcrumbs, and it’s available everywhere now. I buy the seasoned store brand for 99 cents!

    Follow along and try these for yourself, they’re pretty hard to mess up! 🙂

    Pro tip #1: I never flour my chicken when breading – just pull out of the package and dry with a paper towel – it helps the egg stick better! 
    Pro tip #2: Use tongs to do your dipping and breading process – keeps your fingers clean!


    Easy Air Fried Fresh Chicken Breast Strips
    Serves: 3-4 with sides
    (we had peas and rice!)
    Start to Finish: about 30 minutes

    Here’s what you’ll need, and note the cooking time can be altered depending on your preferred crispness and how many you’re making at once:

    • 1 – 1.5 lb of fresh chicken breast strips
    • 4 eggs
    • 2-1/2 cups Seasoned Panko breadcrumbs (I did not test with regular breadcrumbs, so if you do, let me know how they come out!)
    • Salt and pepper to taste; cooking spray

    How To:

    1. Preheat air fryer to 360 degrees F for 5 minutes.
    2. Remove chicken strips from package and pat dry; set up two bowls and one plate.
    3. In one bowl add 4 eggs and whisk to combine. In second bowl, add bread crumbs, salt and pepper.
    4. One by one, dip chicken strips into beaten egg and then drop into bread crumbs, pressing in as needed and shaking off any excess. Transfer to plate and pile up.
    5. Open air fryer and spray bottom of basket with nonstick cooking spray (I use Olive Oil Pam). Place chicken strips in but do not over crowd or layer on top of each other. I fit almost the whole 1.5lb pack in mine.
    6. Spray tops of chicken lightly with nonstick spray (this helps the browning!) and close air fryer.
    7. Cook at 360 degrees for 17 minutes. No need to shake or turn over chicken – just set it, make your sides, and enjoy! Increase time if you like it crispier.

    Easy Slow Cooker Beef Stew

    This is literally a “set it and forget it” meal! What’s better than cooking an entire meal all at once and having it ready before you even get home??

    The best part about beef stew in the slow cooker is that it’s very forgiving. You can add more or less of the meat and veggies, and even throw in some extras like mushrooms or celery. Follow my steps below for a great beef stew.

    This little packet is my go-to secret when I make beef stew or pot roast. I use the same flavor pack for both because the pot roast version just has a great meaty, savory flavor that I haven’t been able to replicate with my own blend of herbs and broth, so don’t judge! 

    Prep veggies and place into the pot. Add the meat and mix together. Then, pour seasoning mix over the top – that’s seriously it!

    Easy Slow Cooker Beef Stew

    Serves 4-6 (more if you serve a side like egg noodles or bread. To make less, just cut down on the quantity of ingredients, same cooking time).

    Start to Finish: 8.5 hours

    What you’ll need:

    • 2-3 lbs stew beef
    • 2 large russet potatoes (or 3-4 red potatoes), chopped into even chunks
    • 3-4 carrots peeled and chopped
    • 1 large onion, sliced
    • 1 cup water
    • Crock Pot seasoning (or herbs/spices of choice)

    How to:

    1. Clean and prep veggies, place in empty slow cooker.
    2. Add stew meat to the slow cooker.
    3. Pour water/herb/spice mixture over meat and veggies, stir well.
    4. Set slow cooker to 8 hours on low and give it a good stir when done. Enjoy!
